Caper, Lemon & Parsley Mash
Ingredients
- 125 gr Butter chopped
- 50 gr Capers in brine, drained roughly chopped
- 2 ea Lemon rind finely grated, juiced
- 875 mL Water
- 175 gr MAGGI CLASSIC Gluten Free Mashed Potato Mix
- 40 gr Flat leaf parsley, fresh chopped
Preparation

1Melt butter in frying pan over medium heat until sizzling, add capers and cook 30 seconds until warmed through. Add lemon rind and 3 tbs lemon juice, toss to combine and remove from heat. Keep warm.

2Bring water to simmer. Add MAGGI CLASSIC Gluten Free Mashed Potato Mix in a steady stream, whisking constantly until mixture thickens. Remove from heat.

3Add parsley to warm butter and fold through mash potato. Season to taste with salt and pepper. SERVING SUGGESTION: Delicious served with char-grilled salmon, pan-fried or poached fish.
