Cheesy Potato Fans

Steaming roasted potatoes layered with gouda cheese, infused with the taste of vegetables and finished with sour cream and chives.
Ingredients
  • 1kg medium potatoes
  • 30g MAGGI® Vegetable Booster
  • 50ml olive oil
  • 300g gouda cheese*, sliced
  • 150g sour cream*
  • 1 tbsp chives, finely chopped
  • Freshly ground black pepper & salt

    Preheat the oven to 200°C.

    Scrub and rinse the potatoes but do not peel them.

    Make deep incisions every 3-4 mm making sure not to cut all the way through the potato,

    but close to bottom of the potato.

    Line an oven tray with baking paper.

    Dust the potatoes with MAGGI® Vegetable

    Booster, sprinkle with a little olive oil, and arrange them on the baking paper.

    Roast in the oven for 30 minutes.

    Remove potatoes from the oven and insert thick slices of cheese in the incisions.

    Return to the oven and continue to roast for 15-20 minutes.

    Remove from the oven and allow to cool for about 10 minutes and salt to taste.

    Serve with sour cream and chives as garnish.
When cutting the potato, place a chopstick on either side of the potato to prevent cutting straight through. For richer flavour, sprinkle parmesan cheese over the top with a light dusting of smoked paprika. For a non-vegan/vegetarian option, alternate cheese slices with bacon pieces
