Cheesy Potato Fans
Steaming roasted potatoes layered with gouda cheese, infused with the taste of vegetables and finished with sour cream and chives.
Ingredients
- 1kg medium potatoes
- 30g MAGGI® Vegetable Booster
- 50ml olive oil
- 300g gouda cheese*, sliced
- 150g sour cream*
- 1 tbsp chives, finely chopped
- Freshly ground black pepper & salt
Preparation

1Preheat the oven to 200°C.

2Scrub and rinse the potatoes but do not peel them.

3Make deep incisions every 3-4 mm making sure not to cut all the way through the potato,

4but close to bottom of the potato.

5Line an oven tray with baking paper.

6Dust the potatoes with MAGGI® Vegetable

7Booster, sprinkle with a little olive oil, and arrange them on the baking paper.

8Roast in the oven for 30 minutes.

9Remove potatoes from the oven and insert thick slices of cheese in the incisions.

10Return to the oven and continue to roast for 15-20 minutes.

11Remove from the oven and allow to cool for about 10 minutes and salt to taste.

12Serve with sour cream and chives as garnish.
When cutting the potato, place a chopstick on either side of the potato to prevent cutting straight through.
For richer flavour, sprinkle parmesan cheese over the top with a light dusting of smoked paprika.
For a non-vegan/vegetarian option, alternate cheese slices with bacon pieces
