Tomato Green Mussels Tossed Linguine
Ingredients
- 700 gr Linguine
- 40 mL Olive oil
- 2.5 kg Mussel, raw
- 40 mL Olive oil
- 100 gr Onion Finely chopped
- 100 gr Chilli pepper, red Fresh red chillis finely chopped
- 15 gr Garlic Finely chopped
- 100 gr Tomato paste
- 20 gr Oregano, dried
- 14 gr Basil lead, fresh
- 50 ea Black olive Pitted
- 1 kg BUITONI Sugo per Pasta (Pasta Sauce)
- 20 gr Parmesan cheese, grated To garnish
Preparation

1Cook pasta in a large saucepan of boiling, salted water until tender. Drain. Toss in oil. Cover to keep warm.

2Meanwhile, cook mussels in a large saucepan of boiling water for about 5 minutes or until shells open (discard any that do not). Drain.

3Heat extra oil in a large saucepan. Add onion, chillies and garlic. Cook, stirring, until onion is soft. Stir in tomato paste and oregano. Add BUITONI Sugo al Pomodoro. Bring to boil. Simmer for 10 minutes. Add mussels and olives. Simmer 5 minutes. Remove pan from heat. Add pasta. Toss to combine.

4Garnish mussel linguini with parmesan.
